Eight villages, one same hand

The Plots, the Essence of Our Cuvées

Our vineyard does not sit on a single hillside. It is scattered in plots across eight villages of the Marne Valley and the hillsides south of Épernay, each with its own soil, aspect and micro-climate. What reads from the sky as a patchwork is, at vine height, a mosaic of nuance. That scattering is what gives our blends their balance.

Eight villages, two départements

Pinot Noir, Chardonnay, Pinot Meunier: our three grape varieties are spread either side of Épernay and out to the hillsides of the Aisne. No single plot makes the wine on its own, and that is precisely what interests us.

The Cellars of Aÿ — silence and chalk

It is at Aÿ, since 2004, that our wines become champagne. The winery first, then the cellars cut into the chalk, where the temperature never moves and the light never enters. The bottles rest there, lying on laths, for as long as it takes.

Plot by plot — making wine in the detail

The harvest is done by hand, plot by plot, at full ripeness. That discipline preserves the identity of each soil, each aspect, each micro-climate, right through to the still wines. The blend erases nothing: it reveals.

Respecting what we pass on

Limited intervention, managed cover cropping, targeted protection of the vineyard. The soil lives, the vines breathe. It is the condition for the generations that follow to inherit a terroir at least as alive as the one ours received.
