From Grape to Bottle, Seven Mastered Steps

One Land, One Hand, One Effervescence
Grower-Producer means every bottle is born solely of our own vines. Harvest, pressing, winemaking, blending, ageing, disgorging: the family masters every stage, with no intermediary and no bought-in fruit. Full traceability, and the freedom to give each cuvée the time it needs, far beyond what the appellation requires.
01 — Harvest
Early September. Pinot Noir, Chardonnay and Pinot Meunier from our plots across eight villages are picked by hand, plot by plot, at full ripeness. The fruit is sorted before reaching the press, within a few hours.
02 — Pressing
Gentle, fractioned pressing in the Champagne tradition: the cuvée first, the finest fraction, then the taille. The must runs to the tanks by gravity, without aggressive pumping.
03 — Alcoholic fermentation
In stainless steel tanks, the sugars become alcohol under the action of the yeasts. Part of the cuvées also passes through barrel to gain complexity.
04 — Blending
The Champagne art par excellence. Each cuvée is composed from the still wines of different plots and harvests to express a style and to hold that style steady from one year to the next. The wines then rest at least nine to ten months in tank before bottling.
05 — Bottling
The wine is bottled with the liqueur de tirage, which triggers the second fermentation, the one that creates the bubble. The bottle is capped, then taken down to the cellar.
06 — Ageing on laths
This is where the Maison sets itself apart. Lying on laths in our chalk cellars, the bottles wait. The autolysis of the yeasts lays down complexity in the wine, its brioche notes and its depth. Each bottle leaves the cellar only when we judge it at its most expressive.
07 — Disgorging & Labelling
The final stage. The yeast deposit is expelled by disgorging, then the bottle receives its label. It waits a further three months before going on sale, the time for the wine to find its balance again, and sets off to you.
