How is a rosé champagne made?
Two methods exist side by side in Champagne. Saignée, where the juice macerates with the skins of black grapes, and assemblage, where red wine is added to white before the second fermentation. Champagne is the only French region where that second method is permitted for a rosé. This one is made that way: the red Meunier in its blend gives it both its colour and its morello cherry.
Serving and storage
Serve between 8 and 10 °C, in a white-wine glass rather than a narrow flute, which closes the aromas down. Before opening, keep the bottle lying down, away from light and from swings in temperature. A cellar or the bottom of a cupboard will do; the refrigerator only for the hours before serving.
Grower champagne
We are Récoltant-Manipulant, a grower producer: we farm, we vinify, we sell. Our parcels cover eight communes of the Marne Valley, and the cellar is in Aÿ.
